Cucumber Lime Fizz Mocktail Recipe

This cucumber lime fizz mocktail combines fresh cucumber, lime juice, and sparkling water with a little simple syrup to soften the tartness. Gently crushing the cucumber releases its juice and gives the drink more flavor than adding slices alone.

Make a pitcher to share with lunch or serve it over ice on a warm afternoon. It takes about 10 minutes to prepare, with extra cucumber and lime slices for garnish if you like.

Ingredients

Makes: 4 servings
Preparation time: About 10 minutes

  • 1 medium cucumber, washed and thinly sliced
  • ¼ cup fresh lime juice, from approximately 2 limes
  • 2 tablespoons plain simple syrup, or to taste
  • 4 cups chilled plain sparkling water or club soda
  • Ice cubes
  • Lime slices and cucumber ribbons, for garnish (optional)

How to Make Your Cucumber Lime Fizz

  1. Prepare the cucumber. Wash and thinly slice the cucumber. Set aside a few slices for garnish. If the skin is thick or tastes bitter, peel the cucumber first.
  2. Release the cucumber juice. Put the remaining cucumber slices into a large pitcher with the lime juice and simple syrup. Press with a muddler or the back of a wooden spoon until the slices release some juice.
  3. Add the fizz. Slowly pour in the chilled sparkling water and stir gently. Taste and add a little more simple syrup or lime juice if needed.
  4. Prepare the glasses. Fill four glasses with ice cubes. Divide the drink among them, spooning in some cucumber slices if you enjoy them.
  5. Garnish and serve. Add the reserved cucumber slices, lime slices, or cucumber ribbons. Serve immediately while the drink is fizzy.

Adjust It to Your Taste

Prefer a less sweet drink? Start with one tablespoon of simple syrup, or leave it out altogether. Taste before adding more.

Want a sharper lime flavor? Add extra lime juice a teaspoon at a time.

Prefer fewer bits? Strain the cucumber-lime mixture before adding the sparkling water. Press the cucumber gently against the strainer to extract its juice.

Fancy a little mint? Add a few washed fresh mint leaves when you crush the cucumber. Press them gently rather than shredding them.

Making It Ahead

Prepare the cucumber, lime juice, and simple syrup mixture ahead and keep it covered in the refrigerator.

Add the chilled sparkling water shortly before serving, then pour over ice. This keeps the drink from losing its fizz or becoming watered down while it waits.

Frequently Asked Questions

Do I need to peel the cucumber?

Not necessarily. Leave the skin on if it is tender and tastes pleasant. Peel it if the skin is tough or bitter.

Can I use bottled lime juice?

Yes. Start with a little less than ¼ cup, then adjust to taste, because bottled lime juice can taste sharper than fresh.

What if I don’t have simple syrup?

For a small batch, stir one tablespoon of sugar into one tablespoon of hot water until dissolved. Let it cool before adding it to the drink. Alternatively, leave out the sweetener for a tarter mocktail.
