This pineapple coconut splash mocktail combines sweet pineapple juice with creamy coconut milk and a little lime juice. It’s a smooth alcohol-free drink you can mix in about five minutes and serve over ice.
Make one generous glass for yourself or divide it into two smaller servings. Taste before adding simple syrup—the pineapple juice may give you all the sweetness you need.
Makes: 1 generous serving or 2 smaller servings
Preparation time: About 5 minutes
Prefer less sweetness? Leave out the simple syrup and let the pineapple juice provide the sweetness.
Want a sharper finish? Add extra lime juice a teaspoon at a time, tasting as you go.
Prefer a lighter drink? Use light unsweetened canned coconut milk, or replace some of the coconut milk with chilled coconut water. Coconut water will give you a thinner, less creamy drink.
Want a thicker, frozen version? Blend the mixture with a small handful of ice instead of pouring it over ice. Add the ice gradually until you reach the texture you like.
Keeping it simple? Skip the garnishes. The pineapple and coconut flavors are there whether you decorate the glass or not.
Mix the pineapple juice, coconut milk, and lime juice ahead of time and keep the mixture covered in the refrigerator.
Shake or whisk it again before serving because the ingredients may separate as they sit. Add ice and garnishes just before serving so the drink stays fresh and isn’t diluted by melting ice.
Can I use bottled or canned pineapple juice?
Yes. You don’t need freshly squeezed juice. Use chilled pineapple juice you enjoy drinking, and taste the mixture before deciding whether to add syrup.
Can I use coconut milk from a carton?
Yes, but it will usually make a thinner, less creamy drink than canned coconut milk. Choose an unsweetened version and adjust the sweetness after mixing.
Is cream of coconut the same as coconut milk?
No. Cream of coconut is a sweetened product often used in drinks and desserts. This recipe uses unsweetened coconut milk, so the two aren’t a direct swap.
Do I need a cocktail shaker?
No. A large jar with a secure lid works well, or you can whisk the ingredients together in a small pitcher. Leave some space in the jar so the mixture can move when you shake it.
Why has my drink separated?
Pineapple juice and coconut milk can separate as the drink stands. Give it a gentle stir before sipping. Thoroughly mixing the coconut milk before measuring also helps.
